MARROWS STUFFED WITH
GROOT
CHICKEN

INGREDIENTS
1 kilo marrows
200gr GROOT chicken finely
minced
2 tablespoons parsley finely
chopped
4 cloves of garlic crushed
1 egg beaten
1 teaspoon mixed spice
1 tablespoon grated cheese
1 litre chicken broth
4 peeled potatoes

METHOD
Wash, top and tail the
marrows. Cut a slice off the
top so as to be able to
hollow out the centre. Save
this for the soup.
Using a teaspoon to remove
the centre. Reserve half of
the centre for stuffing and
the rest used for soup.
Freeze if it is not going to
be used immediately.
Chop finely or process
together with the GROOT
chicken, parsley, garlic,
egg, spices and the cheese.
Mix everything well
together. Stuff each marrow
with this mixture. Prepare
the chicken broth and add
the potato. When it starts
to boil lower the marrows
gently into the soup. After
it starts to boil again
simmer for a further 20 - 30
minutes.
When cooked serve on a plate
together with lemon slices,
the potatoes, and ribbons of
carrot made by scraping the
carrots lengthwise with a
potato peeler and boiling
for 3 minutes.
