BAKED RICE WITH
GROOT
CHICKEN

INGREDIENTS
2 cups Veetee easy cook rice
2 to 3 cloves of chopped
garlic
50gr onions finely chopped
1 tablespoon olive oil
400gr tomatoes peeled &
chopped
2 tablespoon tomato paste
(optional)
200gr finely chopped
marrows (optional)
400gr GROOT chicken finely
chopped
2 beaten eggs
2 tablespoons Parmesan or
Kefalotiri cheese
4 cups water if using
parboiled rice or 6 cups if
using brown rice.
(Oven dish 20cm x 20cm)
Oven Temperature:
190C / 375F

METHOD
Put the oil in the saucepan
and cook the garlic and
onion until soft.
Add some water if it dries.
Add the tomatoes, tomato
paste and marrows (if used)
and simmer the sauce for 30
minutes.
Add the GROOT chicken, stir
and remove from heat. Put
rice in oven dish, add the
sauce and stir well. Add the
cheese, eggs and water. Stir
well. Place the dish in a
pre heated oven and cook for
about 15 minutes.
After this time remove the
dish from the oven and stir
the rice well, return to
oven immediately. Cook for a
further hour.
After an hour check if the
rice is cooked by taking a
few grains of rice from the
centre of the dish.
Remove the dish from the
oven and put it on a cooling
rack for 5 to 10 minutes
before serving.
